Undercooked shrimp will probably be grey and translucent, with uncurled tails. Properly cooked shrimp are going to be opaque using a colour starting from pink or orange, based upon range. Their tails need to curl in somewhat to generate a C-shape. Overcooked shrimp will be a sound white-pink color, with their tails fully curled into a tight circle.
